The Maricopa County Environmental Services Department has taken action against these unpermitted vendors who mainly sell “tacos al pastor” meat cooked on vertical rotisseries in parking lots or on sidewalks. The outdoor food preparation without proper permits raises health concerns, leading to illnesses.
